Our Story

   Currently having 3 shops in Europe,

Pawel & Manoela Petrykowski moved to the US from France in 2019 allowing them to bring their gelato Kraft and Paulo Gelato to the Windy City. 

   Opened in 2022 in West Town, Chicago Paulo Gelato and Chocolate is the realisation of a couple’s dream.

   With over 10 years of experience in food service as a gelato chef in Poland, Pawel Petrykowski partnered with Pawel Bodzicki in 2016, to create a small batch, natural and creative gelato franchise in Poland: Paulo Gelateria. With its unique creations and customer experience in its first shop located in Gdansk, Poland, they have rapidly expanded its franchise to 7 shops, including 5 franchisees.

   Chef Pawel Petrykowski is also a consultant and teacher who travels the world sharing his passion and love for the gelato craft. Pawel created in 2018

his very own signature chocolate recipe "Paulo Gelateria 75%", made with

cocoa beans from Tanzania, Venezuela & Ecuador.

   Pawel's passion for chocolate took him to Alto el Sol, a small cocoa farmer community in the jungle of Juanjui, where he met his soon to be wife Manoela in 2018. Together, they moved to Chicago in 2019 where Manoela was a Marketing Director for a Chocolate company while Pawel started shaping his vision for

his first gelato shop in the Windy City. In June 2022 they opened Paulo Gelato & Chocolate, where all the gelato sold in the shop is prepared daily in front of the customers.
